  • 1 c. cooked pinto beans
  • 1 c. chopped pecans
  • 2 c. sugar
  • 2 sticks melted butter
  • 1 small can coconut
  • 4 eggs
  • 1 Tbsp. vanilla
  • 3 unbaked pie shells (not deep dish shells)

Directions

    Mash beans well. Use the juice.

    Beat eggs.

    Add all the ingredients; mix well.

    Pour in unbaked pie shells (thin shells). Bake 45 minutes to 1 hour at 300°.
