Pinto Bean Pie

  • 1/2 c. sugar
  • 1 c. brown sugar
  • 1 heaping c. mashed pinto beans
  • 1/2 c. butter
  • 2 beaten eggs
  • 1 unbaked pie shell

Directions

    Blend sugars, eggs and butter until creamy. Add pinto beans and blend well. Pour into deep unbaked pie shell. Bake in 375° oven for 20 minutes, then at 350° for 25 minutes or until inserted knife comes out clean. Delicious; tastes like pecan pie. Serve with Cool Whip. Serves 6 to 8 people.
