  • 2 cans pinto beans, drained (or use leftovers)
  • 1 c. diced celery
  • 3/4 c. grated Cheddar cheese
  • 1/3 c. chopped sweet pickles
  • 1/4 c. diced onions
  • 1/2 tsp. salt
  • 1/2 c. mayonnaise
  • 1/3 c. bread crumbs

Directions

    Combine all ingredients except bread crumbs; toss lightly together.

    Pour into a 1 to 1 1/2-quart casserole (flat works best).

    Sprinkle with bread crumbs.

    Bake 10 minutes at 450°, until bread crumbs are brown and mixture is bubbly.
