- 1 lb pinto beans, make sure they are light in color not old and dark beans
- 1 large onion
- 2 -4 large garlic cloves
- 12 tablespoon vegetable oil
- 6 cups water
- 1 -1 12 teaspoon salt
Directions

1Using a 5 quart pot bring water to a full boil.

2Meanwhile, sort out rocks and old beans from bag.

3Throughly wash beans in cold water until water comes out clear.

4When water has come to a full boil add beans, onion, garlic and oil.

5Cover and allow to cook for 30 minutes.

6Check water level (you always want to have enough water just to cover the beans) if it looks like it needs it then add more.

7Reduce heat to a low simmer and continue to cook for an 1 1/2 to 2 hours.

8Remember to check water level every 30 minutes.

9Once beans are fully cooked add salt and allow to simmer 5 minutes.

10These beans can easily be mashed to make refried beans.
