- 1 pkg. active dry yeast
- 1 tsp. sugar
- 1 1/4 c. lukewarm water
- 3 1/2 c. all-purpose flour (unbleached)
- 1 tsp. salt
- 1 Tbsp. olive oil
- corn meal
Directions

1Sprinkle yeast and sugar in water; stir to dissolve.

2Set aside to proof.

3Measure flour and salt into a large bowl; make a well and stir in yeast mixture.

4Knead dough until it is smooth.

5Dough will be sticky at first.

6Use olive oil on hands to facilitate kneading.

7A few drops at a time will surface.

8Knead dough at least 10 minutes, until it is no longer sticky.

9Grease top of dough; turn dough to coat surface.

10Cover bowl; set aside 1 hour to rise.
