Ingredients
- 5 to 5 1/4 c. whole wheat flour or part whole wheat and part unbleached
- 1/2 tsp. salt
- 2 Tbsp. yeast
- 2 c. very warm, but not hot, water
Directions

1Mix ingredients together and add more flour if necessary.

2Make into 2 balls.

3Knead each ball, then divide into 12 smaller balls. Cover.

4Let rise about 30 to 40 minutes.

5Flatten balls to about 6 inches in diameter with rolling pin on a lightly floured board. Cover and let rise slightly.

6Flip the dough so that the bottom side of the bread dough is on the top side of baking sheets. Preheat oven as hot as it bakes.

7Place sheet on lowest rack.

8Bake about 2 to 4 minutes.

9Makes 24 pita breads.
