- 1 lb dry pinto beans (I used navy beans)
- 6 cups water
- 1 (28 ounce) can crushed tomatoes or 1 (28 ounce) can diced tomatoes
- 1 medium onion, chopped
- 12 green bell pepper, chopped (I've used red and orange)
- 3 cloves garlic, minced
- 14 cup grated parmesan cheese or 14 cup romano cheese
- 1 cup mozzarella cheese, shredded
- Italian spices or any herbs, you would use on your pizza
- salt and pepper
Directions

1Rinse and pick through beans.

2Soak overnight Discard soaking water and place beans in crockpot, covering with 6 cups water.

3Cook on HIGH for 2 to 3 hours or until the beans are al dente.

4Save 2 cups of the cooking water.

5Drain.

6Combine all ingredients (except the cheeses) and cook in crockpot for 10 to 12 hours on LOW or 5 to 6 hours on HIGH or until the beans are soft.

7Add cheeses and remove the cover.

8Cook on HIGH an additional 15 to 20 minutes.

9Stir a few times.
