Ingredients
- 16 ounces, weight Fresh Mozzarella Cheese (large Ball Diced Up, Or Small Bite-size Balls)
- 1 package (about 6 Oz. Package) Pepperoni Slices
- 1/4 cups Olive Oil
- 2 Tablespoons Garlic Salt, to taste
- 1 package (7g Package) Active Dry Yeast
- 1 cup Very Warm Water (not Boiling)
- 2 teaspoons Sugar
- 2 cups All-purpose Flour (up To 3 Cups As Needed)
- 1 teaspoon Salt
- 1 can (Large 29 Oz. Can) Plain Tomato Sauce
- 1/2 cans (small 6 Oz. Can) Tomato Paste
- 1 Tablespoon Dried Oregano, to taste
- 2 teaspoons Garlic Salt, to taste
- 1 teaspoon Red Pepper Flakes, to taste

2FOR THE SAUCE Combine all ingredients in a sauce pan.

3Stir together, taste, adjust seasoning as you like it.

4Heat to a boil, then drop the heat and let it simmer while you prep the dough.

5FOR THE DOUGH Combine yeast, warm water, and sugar in a bowl.

6Let it sit for about ten minutes till it starts to bubble with yeastiness.

7Stir in the flour one cup at a time till the mixture gets thick and doughy.

8Knead by hand, adding flour as needed for stickiness, for about five minutes.

9Set aside, covered, in a warm place to rise for at least ten minutes.

10CANNONBALL ASSEMBLY Preheat oven to 375 degrees.

11If youre using the bite-size mozzarella balls, fish them out of their watery packaging, rinse and pat dry.

12If youre using one big hunk of fresh mozzarella, dice it up into half-inch cubes.

13Roll out the dough flat, to about 1/8-1/4 inch thickness.

14Slice into squares, about 3-4 inches to a side (a pizza cutter is best for this).

15On each square, in the center, place a dollop of sauce.

16Then place a slice of pepperoni, a piece of cheese, and another pepperoni slice.

17Fold up the corners of the dough over the pepperoni and cheese.

18Twist the corners together, and pinch the seams closed.

19You have a cannonball!

20Use a baking sheet or pizza pan; brush it all over with olive oil.

21Place each ball seam-side-down on the pan.

22Brush each ball with olive oil and sprinkle with garlic salt.

23Bake for 30 minutes or sokeep an eye on them.

24The cheese really wants to pop out during cooking.

25Serve piping hot with extra sauce for dipping.
