  • 1 lb. ground beef
  • 2 to 3 Tbsp. oil
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, minced or pressed
  • 1 jar (15 oz.) spaghetti sauce
  • 3/4 tsp. Italian seasoning or 1/4 tsp. each basil, oregano and thyme
  • 1/4 tsp. each basil, oregano and thyme
  • 2 c. shredded Cheddar, Monterey Jack or Mozzarella cheese
  • 2 eggs
  • 1 c. milk
  • 1 c. flour
  • 1/2 tsp. salt
  • 3 tsp. grated Parmesan cheese

Directions

    In skillet cook meat on medium-high heat until browned, adding oil as needed.

    Drain off all but 2 teaspoons fat.

    Add vegetables, saute until limp.

    Add sauce and seasonings.

    Simmer uncovered for 5 minutes.

    Spread meat mix in bottom of 9 x 13-inch baking dish/pan.

    Sprinkle cheese evenly over meat.

    In blender add eggs, milk, flour, 1 tablespoon oil and salt.

    Blend, pour over cheese. Sprinkle with Parmesan.

    Bake in preheated oven at 400° until browned and puffy, about 30 minutes.
