- 2 (9-inch) pastries (not deep dish)
- 1 tomato, sliced
- 1 can chopped green chiles, drained
- 1 onion, chopped
- 1 pepperoni, sliced
- Cheddar cheese, grated
- Monterey Jack cheese, grated
- oregano, garlic and pepper
- 3 eggs
- 1 c. half and half
Directions

1Line a 9-inch quiche dish or pie plate with pastry, or use frozen pie shells.

2Prick bottom and sides with fork.

3Bake at 400° for 5 minutes.

4Let cool.

5Layer tomatoes, chiles, onion, pepperoni and cheeses.

6Beat eggs until foamy; stir in half and half.

7Add garlic, oregano and pepper to taste.

8Pour mixture into pie shells.

9Bake at 350° for 1/2 hour.
