Pizza Rice Casserole

Ingredients

  • 2/3 c. rice (or 2 c. leftover rice)
  • 1/4 t. garlic salt
  • dash pepper
  • 1 t. parsley flakes
  • 1 lb. ground beef
  • 2 c. tomato sauce
  • 1 t. sugar
  • 1/4 t. oregano
  • 1 1/2 c. cottage cheese

Directions

    In large skillet brown the ground beef and onion.

    Add tomato sauce, garlic, sugar, pepper, oregano, parsley flakes.

    Cover and simmer for 15 min.

    Cook rice and combine with cottage cheese, 1/4 t. oregano, and 1/2 t. Italian seasoning.

    Put 1/2 of rice mixture in a buttered 2 qt. casserole.

    Top with 1/2 of meat-tomato sauce. Alternate layers, ending with tomato sauce.

    Sprinkle with 1/2 c. shredded cheese and parmesan cheese as desired.

    Bake at 325 degrees for 30 min.
