- 6 eggs
- 1 cup sugar
- 3/4 cup vegetable oil
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- Optional additions: 3 tablespoons fennel seeds or 1/4 teaspoon ground cloves
Directions

1In a large bowl whisk together the eggs, sugar, and oil and mix thoroughly.

2Add the flour, baking powder, and optional flavorings, and mix well to form a homogenous batter.

3Set aside at room temperature for 30 minutes.

4Heat a pizzelle iron until very hot.

5Pour 2 tablespoons batter onto the iron, close it, and return to heat.

6Cook until golden brown, about 2 minutes.

7Repeat until all the batter is used.

8Optional: Remove pizzelle from iron and mold it around a pointed dowel to form a gelato cone.

9Or make 2 pizzelles and spread softened ice cream or gelato and sandwich them together.

10Then dip 1 end into chocolate sauce and enjoy.
