- 2 c. long grain rice (about lb.)
- 2 1/4 c. water (cold or hot)
Directions

1Wash rice 2 or 3 times, rubbing gently between the hands and drain very well.

2Put rice and water into a saucepan of at least 2-quart capacity.

3Cover and bring to a boil over a medium-high heat.

4As soon as it is boiling, turn heat to medium-low and stir the rice with wooden spoon from the bottom up and around the edge. Scrape down the grains on the edge of pan.

5Cover and let boil slowly until water is absorbed.

6Stir gently once again and simmer over very low heat for 20 or 30 minutes.

7Makes 4 cups cooked rice; 4 to 6 servings.
