  • 1/2 cup boiling water
  • 1/2 cup oil
  • 5 eggs
  • 1 1/2 cup castor sugar
  • 2 cup all-purpose flour
  • 4 tsp baking powder
  • 1 tsp vanilla essence

    Preheat oven to 180C

    Grease a large cake tin and set aside

    Mix boiling water and oil and set aside to cool.

    In a separate bowl beat eggs and castor sugar until just combined (do not overbeat)

    Add sifted flour and baking powder to egg mixture
  6. 6
    Add vanilla essence to the egg mixture and mix again

    Slowly add the water and oil mixture and mix until combined

    Pour into cake tin and bake for 20 min.
