- 1/2 cup boiling water
- 1/2 cup oil
- 5 eggs
- 1 1/2 cup castor sugar
- 2 cup all-purpose flour
- 4 tsp baking powder
- 1 tsp vanilla essence
Directions

1Preheat oven to 180C

2Grease a large cake tin and set aside

3Mix boiling water and oil and set aside to cool.

4In a separate bowl beat eggs and castor sugar until just combined (do not overbeat)

5Add sifted flour and baking powder to egg mixture

6Add vanilla essence to the egg mixture and mix again

7Slowly add the water and oil mixture and mix until combined

8Pour into cake tin and bake for 20 min.
