  • 4 Cornish hens
  • salt and pepper
  • 2 Tbsp. melted butter
  • 1 (20 oz.) can pineapple chunks
  • 1 c. orange marmalade
  • 1 Tbsp. cornstarch
  • 2 Tbsp. lemon juice
  • 1 Tbsp. butter
  • 3 bananas, peeled and cut in chunks
  • 2 Tbsp. Cointreau (orange liqueur)
  • 8 servings hot cooked rice

Directions

    Cut hens lengthwise into halves. Sprinkle with salt and pepper.
