Plantation Pound Cake

  • 2 c. cake flour
  • 1 c. butter (no substitute)
  • 1 2/3 c. sugar
  • 5 eggs
  • 1 tsp. vanilla, lemon or almond flavoring

    Sift flour; measure and sift again.

    Cream butter until light and fluffy.

    Gradually add sugar, stirring all the while until fluffy and well blended.

    Add one egg at a time, beating well after each addition.

    After adding the last egg, beat about 5 minutes longer.

    Add flour gradually; mix well to blend.

    Add desired flavoring.

    Pour into a well-greased 10-inch tube pan. Bake in a 300° oven for 1 1/4 hours, or until done.

    Let cool slightly in pan.

    Invert on a cake cooler.
