Plum Cake

Ingredients

  • 2 13 cups self-rising flour
  • 2 cups white sugar
  • 1 cup cooking oil
  • 3 eggs
  • 12 teaspoon cinnamon
  • 12 teaspoon clove
  • 1 cup pecans, chopped
  • 2 (128 ml) jarsstrained plum baby food
  • 1 cup icing sugar
  • lemon juice, to thin (about 1 lemon)

Directions

    Pour all ingredients in a bowl; mix well with a spoon.

    Pour into a well-greased tube or bundt pan.

    Bake in a 350F oven for about an hour.

    Test to see if done.

    A few minutes more may be required.

    Cool in the pan for about 10 minutes.

    Run a knife around the edge and then leave in the pan for awhile longer.

    Turn out onto a plate.

    ICING: Combine icing sugar and lemon juice; pour over cake.
