Plum & Coconut Cake

- 10 -15 plums, stones removed and halved or chopped if using large plums
- 125 g melted butter
- 1 cup sugar
- 1 teaspoon vanilla essence
- 3 eggs, a room temperature
- 1 1/2 cups self-raising flour
- 125 ml milk
- 1 1/2 cups desiccated coconut
Directions

1Preheat oven to 180o Celsius

2Grease and line the base of a 24cm springform cake pan with non-stick paper.

3Combine flour, sugar and coconut in a mixing bowl. Stir in the melted butter, eggs, milk and vanilla and mix well.

4Spread half the mixture in cake pan. Scatter plums over mixture. Spread remaining mixture over plums.

5If have extra plums cut into segments and arrange over the top of the cake.

6Bake for 1 hour or until cooked when tested with a skewer.Cover with foil if it is overbrowning and still not cooked.

7Stand for 10 minutes in a pan before releasing the springform. Serve sliced, warm or at room temperature.

8Delcious with custard or cream.
