- 2 1/4 cups flour
- 1/2 cup sugar
- 3 teaspoons baking powder
- 3/4 teaspoon salt
- 1 cup milk
- 1 egg
- 1/4 cup butter, melted
- 1/2 teaspoon almond extract
- 1 cup red plum, coarsely chopped
Directions

1Preheat oven to 425°F.

2Generously grease 12 muffin cups or line with papers.

3Combine flour, sugar, baking powder, and salt in a large mixing bowl.

4Whisk to blend thoroughly.

5In a separate bowl. whisk milk, egg, melted butter, and almond.

6Make a well in the center of dry ingredients and pour in the egg mixture.

7Blend with a wooden spoon until a moist, lumpy batter is formed.

8Stir in plums.

9Spoon into prepared cups and bake for 20 to 25 minutes, or until a wooden pick inserted in center comes out clean.

10Cool on a rack for 5 minutes, then remove to a rack to cool completely.
