  • plums pound ripe, quartered and pitted
  • 1 red onion small, quartered
  • 1 cup fresh cilantro
  • 1 cup fresh mint
  • 1 tablespoon white wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon red pepper

Directions

    Place plums and onion in a food processor; pulse 10 times, scraping sides of bowl occasionally.

    Add cilantro and remaining ingredients; pulse five times or until mixture is chopped.

    Do not over process mixture or salsa will become mushy.

    Six 1/2 cup servings.
