- plums pound ripe, quartered and pitted
- 1 red onion small, quartered
- 1 cup fresh cilantro
- 1 cup fresh mint
- 1 tablespoon white wine vinegar
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon red pepper
Directions

1Place plums and onion in a food processor; pulse 10 times, scraping sides of bowl occasionally.

2Add cilantro and remaining ingredients; pulse five times or until mixture is chopped.

3Do not over process mixture or salsa will become mushy.
