- 1 catfish fillet (5 to 7 ounces)
- 1 Tbsp. melted butter or margarine
- 1 Tbsp. dry white wine
- 1/2 tsp. lemon juice
- 1/2 tsp. dried thyme leaves
- 1/2 tsp. dried tarragon leaves
- 1/2 tsp. paprika
- salt
- ground white pepper
- parsley sprigs (optional)
- lemon wedge (optional)
Directions

1In medium sized microwave-safe dish, place fish.

2In cup, combine butter, wine, lemon juice, thyme, tarragon, paprika and salt and pepper to taste.

3Cover and microwave on High (100% power) 2 1/2 minutes or until fish flakes when tested with fork.

4Rotate dish one-quarter turn halfway through cooking time.

5To serve, garnish with parsley and lemon.
