Poached Chicken

  • 2 whole chicken breasts (1 1/4 lb. each) or 1 broiler fryer (2 1/2 lb.)
  • about 2 c. water
  • 1 tsp. salt
  • 1 small onion, stuck with 2 cloves
  • 2 parsley sprigs or celery tops

    medium size saucepan or Dutch oven heat chicken and water to a boil; skim off foam.

    Add salt, onion and parsley. Reduce heat;

    cover and simmer 45 minutes or until chicken is tender when

    pierced.

    chicken. Discard skin;

    remove meat from bones in large pieces.

    Strain broth and save for soups
