- 1 lb. fish fillets
Directions

1Heat 1 1/2-inches of water, onion, lemon, parsley, bay leaf, salt and peppercorns to boiling in a 10-inch skillet.

2Reduce heat.

3Arrange fish in single layer in skillet.

4Simmer, uncovered, until fish fillets flake easily with fork, 4 to 6 minutes.
