  • 1 teaspoon kosher salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • Dash of black pepper
  • 1 1/2 pounds boneless pork chops
  • 1/2 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 4 garlic cloves, smashed and minced into a paste
  • 1 teaspoon black pepper
  • Cooking spray

Directions

    Combine first 4 ingredients. Pat pork dry with paper towels; sprinkle with salt mixture. Place pork on a rimmed baking sheet; cover and refrigerate 2 to 4 hours.

    Place pork between 2 layers of plastic wrap; pound to 1/4-inch thickness using a meat mallet. Place pork in a zip-top plastic bag.

    Combine juices, garlic, and 1 teaspoon pepper in a bowl; reserve 1/4 cup juice mixture. Add remaining juice mixture to pork; let stand 30 minutes.

    Preheat grill to medium-high heat.

    Remove pork from marinade; discard marinade. Place pork on grill rack coated with cooking spray; grill 1 minute on each side. Cover grill; grill 5 minutes.

    Place pork on a platter. Drizzle reserved 1/4 cup juice mixture over pork.
