- 3 c. water
- 1 c. yellow corn meal
- 1 tsp. salt
- 2 Tbsp. salad oil
- 1 small chopped onion
- 6 oz. shredded Mozzarella cheese, divided
- 1/4 c. Parmesan cheese
- 3 eggs, beaten
- thin tomato sauce
Directions

1Boil water, salt and oil.

2Add corn meal into thin, steady stream.

3Stir continuously until mixture comes away from sides of pan.

4Remove from heat.

5Stir in onions, (4 ounces; 1 cup) Mozzarella, Parmesan cheeses and eggs.

6Spread in oiled 8 x 8-inch pan.

7Bake at 350° for 30 minutes.

8Remove and immediately spread with a thin layer of tomato sauce.

9Sprinkle with remaining Mozzarella over tomato sauce.

10Serves 8.
