- 1 quart water
- 1 teaspoon salt
- 1 1/4 cups (6 ounces) yellow cornmeal
Directions

1Bring water to a boil in a large saucepan and add the salt.

2Slowly stir the cornmeal into the boiling water, sprinkling it on top of the water as you mix it in with a whisk to keep it from becoming lumpy.

3Cook, stirring occasionally, for 20 to 25 minutes.

4Serve with the haddock (see recipe).
