- 1 yellow bell pepper
- 1 red onion
- 2 tomatoes
- 12 oz. jar apricot preserves
- 2 Tbsp. soy sauce
- 1/4 c. red wine vinegar
- 1 tsp. grated ginger
- 1/4 tsp. garlic powder
- 3/4 tsp. salt
- 20 oz. can pineapple chunks, drained
Directions

1Cut peppers into 1-inch chunks.

2Cut onion and tomatoes into 1/2-inch wedges.

4preserves, soy sauce, vinegar, ginger, garlic powder and salt.

5Add peppers and onion.

6Cover and cook for 10 minutes
