- 1 large eggplant
- 1 c. chopped tomatoes
- 1/2 c. finely chopped onion
- 1/2 c. finely chopped celery
- 1/2 c. finely chopped green pepper
- 1 to 2 Tbsp. olive oil
- salt to taste
Directions

1Bake whole eggplant in 400° oven for one hour until it looks collapsed.

2Then skin eggplant and mash with fork.

3Lightly saute onion, celery, green pepper and tomatoes.

4Add this to eggplant pulp and chill for two or three hours.

5Yields about 2 1/2 cups.
