- 12 cup onion, chopped
- 12 cup celery, chopped
- 12 cup green bell pepper
- 1 garlic clove, minced
- 3 tablespoons olive oil
- 1 (1 lb) can tomatoes
- 1 (8 ounce) can tomato sauce
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 bay leaf
- 1 teaspoon chili powder
- 1 tablespoon Worcestershire sauce
- 1 (29 ounce) can hominy, drained
- 1 teaspoon cornstarch
- 2 (9 ounce) cans tuna (packed in water)
- 1 dash Tabasco sauce
Directions

1Cook onion, celery, green bell peppers and garlic in hot oil until tender but not brown.

2Add tomatoes, tomato sauce and seasonings, and hominy.

3Simmer uncovered about 45 minutes.

4stirring occasionally.

5Mix cornstarch and 2 teaspoon water, stir into sauce.

6Add canned tuna simmer 5 minutes.

7Serve over rice.
