  • 1 c. flour
  • 1/4 tsp. salt
  • 2 eggs, beaten
  • 1 c. cold milk
  • 1 Tbsp. vegetable oil

Directions

    Beat eggs until foamy and stir in milk and oil.

    Add flour and salt and beat until smooth (about 1 minute).

    Fill hot greased popover pan (or muffin tin) 1/3 full and bake at 450° for about 20 minutes, then reduce heat to 350° and bake 15 minutes longer, until popovers are firm.

    Makes about 8.
