Poppy Seed Bread

  • 4 eggs
  • 2 c. sugar
  • 1 1/2 c. oil
  • 3 c. flour
  • 1 1/4 c. buttermilk
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1/2 c. chopped nuts (pecans)
  • 2 oz. poppy seed

    With a mixer, beat eggs and sugar until frothy.

    Add oil and beat well.

    Sift flour, salt and soda together.

    Then alternately add flour mixture and buttermilk with egg mixture.

    Stir in poppy seed and chopped nuts by hand.

    Bake at 325° for 45 to 50 minutes. Makes 2 small loaves.
