Poppy Seed Squash

Ingredients

  • 1 medium zucchini, cut in julienne strips
  • 1 small yellow squash, cut in julienne strips
  • 1 1/2 c. jicama, cut in julienne strips (about 6 oz.)
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. honey
  • 1 tsp. poppy seed
  • 2 drops red pepper sauce

Directions

    Place steamer basket in 1/2-inch water (water should not touch bottom of basket).

    Place zucchini, yellow squash and jicama in basket.

    Cover tightly and heat to boiling for 3 to 5 minutes. Drain.

    Mix remaining ingredients; stir in vegetables.

    Makes 4 servings.
