Ingredients
- 1 lb. loin of pork
- 1/3 c. vegetable oil
- 2 apples, finely chopped
- 1 medium onion
- 1 clove garlic, minced
- 1 (15 oz.) can tomato sauce
- 1/2 c. water
- 1/2 c. golden seedless raisins
- 2 Tbsp. brown sugar
- 1 or 2 Tbsp. curry powder
- 1/2 tsp. ground ginger
- 1 Tbsp. vinegar
Directions

1In a large skillet, cook pork in oil until golden brown (sprinkle with salt); set aside.

2Add apples, onion and garlic and cook until onion is tender.

3Drain off excess fat.

4Stir in tomato sauce, water, raisins, brown sugar, vinegar, curry powder, ginger and 1 teaspoon salt.

5Return pork to skillet.

6Cover and simmer until pork is tender, basting occasionally.

7Serve over rice. (Very good if you like curry.)
