Ingredients
- 2 lb. pork (1/4-inch thick), then pounded thin
- 3 Tbsp. olive oil
- 1/2 red onion, finely diced
- 3 Tbsp. minced garlic
- 1 (10 3/4 oz.) can beef broth
- 1 (10 3/4 oz.) can chicken broth
- 1 Tbsp. basil
- 1 Tbsp. oregano
- 1/2 c. Marsala wine
Directions

1Heat oil on high heat.

2Brown and remove pork.

3Reduce to medium heat.

4Add onion and cook 5 minutes.

5Add garlic; cook 2 minutes.

6Stir in broth.

7Bring to boil and then reduce heat to simmer.

8Reduce liquid by a 1/4.

9Add basil, oregano, salt and pepper to taste.

10Put pork into broth.
-
11Add wine.
-
12Cover and simmer until pork is tender (about 1 1/2 hours).
