  • 2 Tbs. chopped fresh thyme or
  • 2 tsp.dried thyme
  • 1 TBS. chopped sage or
  • 1 tsp dried sage
  • 2 tsp salt - sea or kosher
  • 1 tsp freshly ground pepper
  • 1/4 tsp ground allspice or clove
  • 2 cloves garlic, minced

    for a 4-5 lb. pork loin

    lighly coat meat with a little olive oil and then rub this dry mixture all over the meat. Cover or wrap and keep in refrigerator for a couple of hrs. before roasting. Bring meat to room temp. before roasting or grilling.
