  • 6 ounces portabella mushrooms
  • salt to taste
  • white pepper to taste
  • extra-virgin olive oil
  • 3 ounces extra-virgin olive oil
  • 2 lime juice only
  • 2 cloves garlic minced
  • 1 shallot small, chopped
  • 1 teaspoon fresh rosemary Chopped
  • 1 teaspoon fresh parsley Chopped

Directions

    Brush the mushrooms with olive oil and season with salt and white pepper to taste. Broil for 4-6 minutes, until soft. Let cool.

    Combine 3 oz. olive oil, lime juice, garlic, shallot, rosemary, and parsley and pour over mushrooms. Marinate at least one hour in the mixture. Chill thoroughly before serving.
