- 1 c. low-fat (2 %) milk
- 2 lg. eggs
- 1/4 tsp. salt
- 2 Tbsp. unsalted butter or margarine, room temperature
- 1 c. sifted, all-purpose flour
Directions

1Preheat the oven to 450°.

2Grease 9 regular-size muffin cups well with butter or margarine; fill any remaining muffin cups with water.

3Place in the oven to heat.

4In a medium-size bowl, with an electric mixer set on high, beat the milk, eggs, salt, and butter or margarine until frothy.

5Add the flour, beating just until smooth.

6Fill the 9 muffin cups 2/3 full.

7Bake for 20 minutes. Lower the heat to 350° and bake 10 minutes longer or until golden and set.

8Serve immediately with strawberry or blueberry preserves.
