- 3 lb. Swiss steak, trimmed of fat
- 1 Tbsp. oil
- 1/4 c. soy sauce
- 1 c. brewed coffee
- 2 bay leaves, crumbled
- 1 garlic clove, minced
- 1/2 tsp. dried oregano
- 2 onions, sliced
Directions

1Brown meat in oil in heated skillet.

2In large roasting pan, mix soy sauce, coffee, bay leaves, garlic, oregano and one sliced onion.

3Transfer meat to roasting pan.

4Top with second sliced onion.

5Cover and bake in 300° oven for 3 1/2 to 4 hours, basting every hour with pan juices.

6If liquid begins to boil away, add another cup of coffee and a splash of soy sauce.

7Serve with pan juices.
