- 2 1/2 lb. beef roast
- 1 c. water
- 1 c. tomatoes, chopped
- 5 carrots
- salt and pepper to taste
- 2 Tbsp. fat
- 3/4 c. black coffee
- 1 onion, sliced
- 2 c. potatoes
Directions

1Brown meat on all sides in hot fat.

2Pour water and coffee over roast.

3Add salt and pepper.

4Bring to a brisk boil.

5Reduce heat and simmer 40 minutes.

6Add tomatoes, onion and carrots.

7Simmer 20 minutes.

8Add potatoes and simmer until vegetables are tender.
