Ingredients
- 1 (3 or 4 lb.) roast
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 Tbsp. fresh ginger
- 1 tsp. minced garlic
- 1 c. soy sauce
- 1/2 c. beef broth
- 2 Tbsp. oil
- 6 to 8 small potatoes, peeled
- 6 to 8 medium onions, peeled
- 1 pkg. small carrots
Directions

1Brown roast on both sides in skillet (without oil), then place in crock-pot.

2Take chopped onion, chopped green pepper, fresh ginger and minced garlic; stir-fry in oil in skillet until tender. Add soy sauce and beef broth; bring to a boil and pour over roast.

3Add whole potatoes, onions and carrots.

4Cook for 4 to 5 hours, or until meat is tender.

5Baste vegetables every hour.
