Ingredients

  • 1 (3 or 4 lb.) roast
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 Tbsp. fresh ginger
  • 1 tsp. minced garlic
  • 1 c. soy sauce
  • 1/2 c. beef broth
  • 2 Tbsp. oil
  • 6 to 8 small potatoes, peeled
  • 6 to 8 medium onions, peeled
  • 1 pkg. small carrots

Directions

    Brown roast on both sides in skillet (without oil), then place in crock-pot.

    Take chopped onion, chopped green pepper, fresh ginger and minced garlic; stir-fry in oil in skillet until tender. Add soy sauce and beef broth; bring to a boil and pour over roast.

    Add whole potatoes, onions and carrots.

    Cook for 4 to 5 hours, or until meat is tender.

    Baste vegetables every hour.
