Pot Roast Barbecue Style

Ingredients

  • 1 onion, chopped
  • 1 can tomato sauce
  • 1/2 c. bouillon
  • 5 lb. beef pot roast
  • 1/2 c. catsup
  • 1 Tbsp. Worcestershire sauce
  • 1/4 tsp. garlic powder
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 2 Tbsp. shortening
  • 1/4 c. vinegar
  • 1 tsp. mustard

Directions

    Combine onion, garlic, bouillon, tomato sauce, salt and pepper.

    Pour over meat in a large bowl.

    Marinate overnight in refrigerator.

    Heat shortening in heavy skillet, remove meat from marinade and brown on both sides in hot fat.

    Blend catsup, vinegar, Worcestershire and mustard into marinade and pour over meat.

    Cover pan and simmer until meat is tender, about 2 to 2 1/2 hours.

    Gravy may be thickened slightly.
