- 1 boneless lean beef roast (at least 1 1/2 lb.)
- 1 (14 1/2 oz.) can stewed tomatoes, chopped
- 1/2 c. onion, chopped (1 medium)
- 1/2 to 1 c. tomato juice
- 1 clove garlic, minced (can use more)
- 2 bay leaves
- 2 to 3 beef bouillon cubes
- 1 tsp. dry basil
- 1/8 tsp. pepper
- 3 medium potatoes, peeled and quartered
- 3 carrots, cut
- 1 large onion, sliced in 1-inch lengths
- 2 Tbsp. water
- 4 tsp. cornstarch

1Spray cold Dutch oven.

2Preheat over medium-high heat and then brown the meat on all sides.

3Add tomatoes, chopped onion, tomato juice, bay leaves, garlic, bouillon cubes, basil and pepper. Reduce heat and simmer 1 hour, covered.
