Ingredients

  • 1 boneless lean beef roast (at least 1 1/2 lb.)
  • 1 (14 1/2 oz.) can stewed tomatoes, chopped
  • 1/2 c. onion, chopped (1 medium)
  • 1/2 to 1 c. tomato juice
  • 1 clove garlic, minced (can use more)
  • 2 bay leaves
  • 2 to 3 beef bouillon cubes
  • 1 tsp. dry basil
  • 1/8 tsp. pepper
  • 3 medium potatoes, peeled and quartered
  • 3 carrots, cut
  • 1 large onion, sliced in 1-inch lengths
  • 2 Tbsp. water
  • 4 tsp. cornstarch

Directions

    Spray cold Dutch oven.

    Preheat over medium-high heat and then brown the meat on all sides.

    Add tomatoes, chopped onion, tomato juice, bay leaves, garlic, bouillon cubes, basil and pepper. Reduce heat and simmer 1 hour, covered.
