  • 6 slices of extra lean center cut, meaty bacon cut in small pieces
  • 1 cup cut up already cooked chicken
  • 2 medium potatoes, peeled and cut in small dices
  • 8 eggs, beaten
  • Olive oil
  • Salt and pepper
  • Chopped parsley
