Ingredients
- 2 c. mashed potatoes
- 1 1/2 c. milk, scalded
- 1/3 c. butter
- 2 Tbsp. honey
- 2 tsp. salt
- 2 pkg. active dry yeast
- 1/2 c. warm water
- 2 eggs
- 7 to 8 c. flour, divided
- 2 Tbsp. melted butter
Directions

1Combine mashed potatoes, milk, butter, honey and salt. Sprinkle yeast into warm water.

2Let stand for 5 minutes.

3Add yeast mixture, eggs and 3 cups flour to potato mixture.

4Beat with wooden spoon. Gradually add flour until dough forms.

5Knead on floured surface for 10 minutes, adding more flour if necessary. Place dough in greased bowl.

6Cover with towel and let rise until double.

7Punch down.

8Divide dough into thirds.

9Shape into loaves.

10Place in three 5 x 9-inch bread pans.

11Cover and let rise until double.

12Bake at 350° for 35 to 45 minutes or until golden brown. Brush tops with butter. Cool.
