- 1 cup margarine, softened
- 2 cups sugar
- 2 eggs
- 1 cup cold mashed potatoes
- 1 tsp. vanilla extract
- 2 cups all-purpose flour
- 1/4 cup cocoa
- 1 tsp. baking soda
- 1 cup milk
- 1 cup chopped nuts
Directions

1Cream butter and sugar until fluffy.

2Add eggs one at a time beating well.

3Blend in potatoes and vanilla.

4Mix flourcocoa and baking soda and alternately add with milk blending well.

5Stir in nuts.

6Pour into a greased 13x9x2-inch baking pan.

7Bake at 350F for 40-45 minutes or until cake tests done.

8Cool on a wire rack.

9Frost with your favorite icing.
