- 2 c. mashed potatoes
- 2 Tbsp. melted butter
- 4 Tbsp. flour
Directions

1Peel potatoes; boil and mash well.

2Add butter and work in the flour.

3Turn onto a floured board; roll out to 1/2-inch thickness. Cut into rounds or triangles.

4Cook in slightly greased pan for 3 minutes on each side, pricking with a fork.

5Makes about 20 cakes. Delicious with sausage or bacon.
