Potato Candy

   Boil potato until well done; then mash and mix enough sugar with potato to make the mix thick enough to roll out flat. Sprinkle dough board with small amount of powdered sugar and roll potato mixture out flat.

   Spread peanut butter over the potato mixture; roll slowly into a roll and wrap tightly in wax paper. Place in the refrigerator until roll is hard enough to slice.
