  • 1 medium potato (a little larger than an egg)
  • 2 tsp. butter
  • 1 tsp. vanilla
  • 1 box confectioners sugar, sifted
  • peanut butter

Directions

    Cook potato in the skin until tender.

    Cool.

    Peel and mash well.

    Add butter and vanilla.

    Stir until well mixed.

    Add sugar (more if necessary) until mixture is the consistency of pie dough. Divide dough into 4 to 5 parts.

    Put dough on wax paper or a pastry cloth that has been covered with confectioners sugar.

    Roll out thin like a pie crust and spread with peanut butter.

    Roll up like a jelly roll and slice.

    Keep in refrigerator.
