- 1 medium potato (a little larger than an egg)
- 2 tsp. butter
- 1 tsp. vanilla
- 1 box confectioners sugar, sifted
- peanut butter
Directions

1Cook potato in the skin until tender.

2Cool.

3Peel and mash well.

4Add butter and vanilla.

5Stir until well mixed.

6Add sugar (more if necessary) until mixture is the consistency of pie dough. Divide dough into 4 to 5 parts.

7Put dough on wax paper or a pastry cloth that has been covered with confectioners sugar.

8Roll out thin like a pie crust and spread with peanut butter.

9Roll up like a jelly roll and slice.

10Keep in refrigerator.
