  • 1 medium potato
  • 2 lb. powdered sugar
  • 1/4 - 1/3 stick margarine
  • peanut butter, smooth or chunky

Directions

    Boil potato with jacket on until well done.

    Peel and mash while hot (do not add anything extra to potato).

    Add margarine and gradually add sugar until all mixed.
  4. 4
    Roll out mixture very thin (1/8 inch) and spread peanut butter over all.

    Roll up like a jelly roll.

    Wrap in plastic wrap and refrigerate at least 2 hours. Slice in 1/4 inch slices.
