- 1 medium potato
- 2 lb. powdered sugar
- 1/4 - 1/3 stick margarine
- peanut butter, smooth or chunky
Directions

1Boil potato with jacket on until well done.

2Peel and mash while hot (do not add anything extra to potato).

3Add margarine and gradually add sugar until all mixed.

4Roll out mixture very thin (1/8 inch) and spread peanut butter over all.

5Roll up like a jelly roll.

6Wrap in plastic wrap and refrigerate at least 2 hours. Slice in 1/4 inch slices.
