  • 2 12 lbs powdered sugar
  • 1 12 cups creamy peanut butter

Directions

    Peel and quarter potato; boil until tender.

    Drain and place in a medium size mixing bowl; Mash with a fork until smooth and creamy.

    Stir in powdered sugar, one cup at a time, until a firm dough is formed.

    Turn dough onto surface dusted with powdered sugar; roll to a 1/4 inches thick rectangle.

    Spread peanut butter evenly over surface; roll lengthwise into a log.

    Slice into 3/4 inches pieces.
